I'm not a morning person, but that doesn't really matter once you decide to have children! So in order to help make our mornings run smoother and keep my kids full until lunchtime I bake all types of homemade muffins or breads.
I found this recipe online, however, I had to recreate it to make it dairy free and egg free because FatMack is allergic to both. To substitute the eggs I made a " flax egg" which is very simple: combine water and ground flax seed. You can purchase flax seed seeds at any grocery store and I use a food processor to grind them.
These muffins are fluffy and delicious with a taste of banana goodness. I usually enjoy my muffins with a cup of coffee and the boys usually have veggie sausage patty and cup of water with theirs. When these muffins make sure to keep the dry ingredients separated from the wet ingredients until it is time to combine the two. Once they are combined fold in the walnuts. Don't mix to much or you'll take away the fluffiness.
I try to make a large batch of baked goods on Sunday in hopes of them lasting the entire week. Sometimes that great plan works out other times not so much!
